 if u're using AS 1.5preX, u can do it like this:
    MyStyle "menu_title_style"
	...
	BackColor	<color_u_like>
	...
    ~MyStyle

    MenuTitleStyle "menu_title_style"

 or with AS 1.4.X:
	MTitleBackColor <color_u_like>

  also, be sure to set the Texture type of menutitle to 0
