With XFree86 3.3.x, you can put

DefaultColorDepth xxx

on your /etc/XF86Config file, in the "Screen" section that you actually
use (there will probably be more than one "Screen" section). "xxx" can
be 8, 16, 24 or 32 (depending on the capacity of your graphics card).
You can find more details on XF86Config (4/5) manpage.
